Mock-Wonton Soup

It rained all day today, which put me in the mood for soup. One can almost pretend Autumn is coming here, even though it's not.

I've been craving Wonton Soup. It's something I really miss with not eating gluten, and of course I see it on menus in Singapore all the time. I decided to try making some for myself minus the gluten. I got out my gluten free soy sauce, whatever veggies we had in the house, the ground pork from the freezer, frozen prawns, and boxed chicken broth.

I ended up using the ingredients from this recipe, only I made the wonton pork mixture into meatballs and put 1/2 a prawn in the middle of each. The pork mixture was very wet, so I fried the outside of the meatballs in the bottom of the pot to keep them from falling apart and then put them aside. I added them back to the pot with the bok choy for the last 5 minutes of cooking. They were done when they floated.

To compensate for no wheat wrappers, I added some wider rice noodles to my bowl. I always keep rice noodles separate and put them right in the bowl. They don't survive as leftover if you put them right in to the soup pot; They soak up all the broth.

For the broth, I used 2 boxes of chicken broth and only 1 tablespoon of soy sauce (instead of the 4 called for); more would have been way too salty.

This approach totally hit the spot. It had all the right flavours and the meatballs held together really well. Those prawns hidden in the middle totally made it wonton soup to me, and I still got my noodle fix. MsI was a fan too.
