I've been working through a cookbook I got from the library. It's overdue now.

I've loved everything I've made from this book. I've been photocopying pages. This morning MsI and I made Bibingka for Breakfast. They're traditional coconut rice cakes and you would never know it's not regular flour. I found them very much like a white cupcake. Quite sweet too. I was able to put one aside to see if it still takes good tomorrow or if this something you need to bake and then eat immediately. You're supposed to put the batter in pans lined with banana leaves. I could do that here, but in the nature of staying home I used "Christmas Cupcake lines" and we broke into the Christmas candy decorations and make them into reindeer as we ate them.

Actually I ate mine with butter and some pieces of chocolate and a scoop of fresh mango on the side. But the kids liked my "coconut cream icing" (No dairy here). I kept the icing in the freezer in between cupcakes. It's so hot here; icing just melts.

It also turns out it was Jonathan's coworkers birthday, so we decorated him a cupcake and interrupted their meeting to sing him Happy birthday. Ms blew out the candle and then Jonathan ate Remi's cupcake.

Because baking breakfast doesn't fill up the day, I also decided to cut my hair. It was long over due.
